Main ingredients: baked ham , artichokes


For the dough:
• 300 g flour
• 150 g butter
• 60 g water (approx.)
• 10 g salt

For the filling:
• 100 g smoked ham, sliced 6 artichokes
• 50 g black olives
• 50 g Pecorino cheese, grated
• 50 g cream
• 1 egg
• Salt and pepper
• Basil and parsley
• Extra virgin olive oil


For the dough:

Make a well in the flour on the chopping board, put the diced butter and salt in the centre and work with your fingers until you are left with a lot of crumbs. Add the water and knead quickly to form a single ball, then wrap in kitchen foil and leave in the refrigerator for at least 40 minutes.

For the filling:

Clean the artichokes and cut into wedges, keeping them in carbonated water until you are ready to use them. Heat a little oil in a large frying pan, add the artichokes and brown over a low heat until softened, then adjust the seasoning and add extra flavour with the aromatic herbs, the cheese and the chopped olives.

Roll out the dough and line a tart tin, tip in half of the filling, cover with the ham slices and finish with the remaining artichokes.

Beat the cream with the egg and pour it over the top.

Bake in the oven at 180° for 35/40 minutes.
