King prawn, grapefruit and fennel starter

INGREDIENTS:

• 16 large king prawns
• ? crunchy fennel bulb
• 1 + ? pink grapefruit
• chives
• salad leaves
• 20 g extra virgin olive oil
• salt and pepper

METHOD

Thinly slice the fennel and plunge it into iced water. Juice half a grapefruit and peel the remaining slices down to the flesh.

Clean the prawns, discarding the shells and intestines. Season with salt, pepper, oil and a spritz of grapefruit juice. Place on a perforated tray and cook at 100° using the steam function. Cook for 4 minutes. Remove from the oven and leave to cool.

Drain and dry the fennel. Arrange the salad leaves and fennel slices on plates, then lay the prawns and grapefruit slices on top.

In a cup, emulsify the juice of ? a grapefruit with oil, salt and pepper. Add the dressing to the starter and decorate with a few chives.

Peeling down to the flesh
